Please check with your organization regarding its affiliation with Princess and for internship application details. For summer placements, recruitment generally begins in December and runs through March.

I don't think cruise ships do internships onboard. They may do something in their corporate offices though. Internships onboard wouldn't be very cost effective for them because they have to provide you with a room and food. Anyway, your best bet would be to get an internship at a hotel. It's crazy to think you can't find anything in Florida since it's packed with hotels. Good luck.
In the summer they also have ground stuff in Alaska when their ships are there.
